Cauliflower rice is a low carb, nutrient packed rice alternative that you can make right at home or buy prepared straight from the grocery store. The rice can be used in tons of tasty recipes the whole family will love. These four recipes are sure to turn you into a cauliflower lover.

How to make cauliflower “rice”

Making your own cauliflower rice is a breeze. Just pulse chopped cauliflower florets in a food processor until the texture resembles rice. Depending on your food processor’s power, this can happen quickly, so check the texture often. 

Once you have your rice, it’s time to get creative.

1. Mushroom Cauliflower “Rice” Skillet Recipe

This vegan recipe packs a lot of flavor into a dish with a surprisingly simple list of ingredients. It’s a filling dish that’s great for both breakfast and dinner.


  • 2 tablespoons olive oil
  • 1 stalk celery, sliced
  • 1/2 cup chopped onion
  • 1 large garlic clove, minced
  • 3 cups sliced mushrooms
  • 1 3/4 cups cauliflower rice
  • 1/3 cup vegetable brothSoy sauce to taste (optional)
  • 2 cups spinach
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped


Heat olive oil in a large skillet over medium heat, then add onions and celery. Cook for approximately 5 minutes or until tender. Next, add the garlic and sauté for 30 seconds, then add the mushrooms and sauté them until cooked through.

Mix in the cauliflower rice, vegetable broth, and soy sauce. Cook until the rice until it’s soft, but not mushy, and the broth has been absorbed. To finish, add the spinach, cook for 2 minutes, and then season with salt and pepper to taste. Garnish with fresh chopped parsley.

2. Fried Cauliflower Rice

This recipe has all of the comfort food goodness you expect from fried rice, but it’s a whole lot healthier. You could easily whip up a large batch and keep the leftovers in the fridge for up to a week. This dish is fantastic on its own or as a side dish.

3. Taco Cauliflower Rice Skillet

Here’s another skillet that will make weekday meal prep a snap. You can use it as a dip, a taco filling, or devour it solo. It’s perfect for picky eaters, since everyone can add their own toppings like sour cream (or Greek yogurt), cheese, jalapenos, avocado, and any other favorites.
