It can be tricky to find meatless, low carb dinners, but these “burgers” will have even the staunchest of carnivores going back for seconds. They’re super easy to prepare on the grill, too.

Shakshuka

This popular Mediterranean dish is another easy vegetarian dinner that can be cooked in a single skillet right on your stovetop. It’s full of delicious tomato sauce, fresh chopped bell peppers, perfectly paired spices, and eggs.

Not surprisingly, Shakshuka also makes for a yummy breakfast or lunch.

Low Carb Spaghetti Squash and Meatballs

Using prepared meatballs makes cooking this low carb spin on spaghetti a snap, though you could also make your own.

Ingredients:

  • 2 medium-sized spaghetti squash
  • Olive oil
  • Salt and pepper
  • 1 cup marinara sauce
  • 1 pound prepared meatballs
  • 1 cup shredded mozzarella cheese

Directions:

After heating your oven to 400° Fahrenheit, pierce each squash several times on all sides. Microwave for 3 minutes, flipping once. Using a sharp knife, cut each squash in half lengthwise. Remove the seeds with a spoon, lay each half cut-side up on a baking sheet lined with foil and sprayed with cooking spray. Brush with olive oil and season with salt and pepper.

Roast for approximately 50-60 minutes. Let the squash cool as you cook the meatballs according to instructions. Scrape the squash’s flesh with a fork, creating “spaghetti” strands. Leave the strands in the squash shells and top each half with 4 meatballs, ¼ cup marinara sauce, and ¼ cup cheese. Broil until the cheese is golden brown and bubbling. Remove from the oven, serve, and dig in.

Spaghetti squash is a versatile way to satisfy pasta cravings beyond spaghetti and meatballs. This slow cooker recipe is creamy, garlicky, and could hardly be easier to prepare.
