Spicy Asian Chicken Salad Lettuce Cups

This recipe puts a spicy twist on chicken salad, a popular picnic food that’s perfect for summer. With a store-bought rotisserie chicken, you can whip this delicious meal up in about 20 minutes:

Ingredients:

  • ½ cup mayonnaise
  • 2 teaspoons chile-garlic sauce
  • 1 teaspoon Dijon mustard
  • ½ teaspoon Asian sesame oil
  • 2-pound rotisserie chicken, skinless and boneless pulled into bite-sized pieces
  • ⅓ cup water chestnuts, chopped
  • 2 scallions, thinly sliced
  • 12 Bibb or iceberg lettuce leaves
  • 1 avocado, sliced

Directions:

Combine the mayonnaise, chile-garlic sauce, mustard, and sesame oil in a medium-sized bowl. Add the chicken, water chestnuts, and scallions. Season with salt and pepper. Fill each lettuce leaf with a spoonful of the chicken salad and top with a slice of avocado.

Greek Lemon Chicken Skewers With Tzatziki

Ingredients:

  • 1 ¼ cup Greek yogurt
  • ½ cucumber, diced
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 1 ½ teaspoons garlic powder
  • ¼ cup chopped dill
  • 1 lemon
  • 1 teaspoon oregano
  • Pinch of cayenne pepper
  • 1½ pounds boneless, skinless chicken breast cut into ½ inch strips

Directions:
