Easy Casserole Recipes The Whole Family Will Love 

 

Getting dinner on the table on weeknights can feel like a Herculean task, but that’s where an arsenal of casserole recipes comes in handy. 

These one-dish meals are easy to throw together, taste like you spent hours in the kitchen, and involve minimal cleanup. Keep reading to see some of our favorite dependable and totally doable casserole recipes that will satisfy the whole family. 

Ground Turkey Mexican Lasagna

Based on the name, it might sound like there’s too much going on in this dish. But give it a try. You’ll come to love this hearty combination of spices, bell peppers, onions, black beans, ground turkey, and cheese. 

Curried Spinach and Lentil Bake

This is one vegan casserole that’s bound to satisfy everyone, even the carnivores.

Ingredients:

  • 2/3 cup raw brown lentils.
  • 2 2/3 cups water
  • 1 cup chopped onion (yellow or red)
  • 1 bunch fresh spinach, finely chopped
  • 1 clove garlic, finely chopped
  • 3 tablespoons olive or canola oil
  • 2 teaspoon yellow curry powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup brown rice
  • 2 cups coconut milk

Directions:

First, rinse the lentils and remove any stones, then add to a saucepan with 1 1/3 cups of water. On your stove top, bring the water and lentils to a boil. Turn the heat down to medium low and simmer for 25 minutes. 

In another saucepan, cook the brown rice in 1 1/3 cups of water. Bring the water to a boil, then turn down the heat and simmer for 10 minutes. 

While the lentils and rice cook, finely chop the onions, garlic, and spinach. Next, preheat your oven to 350º Fahrenheit. Sauté the onions and garlic in oil over medium-high heat. Stir until the onions are soft and translucent. Stir in the rice, curry powder, and salt and pepper. Cook for two minutes before adding the chopped spinach, cooked lentils, and coconut milk. Cook for one additional minute and transfer the mixture to a casserole dish. Cover the dish and bake for 35 minutes.

White Chicken Enchilada Casserole

This creamy and delicious “stacked” enchilada recipe is comfort food at its finest, and swapping Greek yogurt for sour cream helps up the health factor. 

Vegan Samosa Casserole

Ingredients:

  • 2 diced potatoes
  • 1 head cauliflower, chopped
  • 1/4 teaspoon garlic powder
  • 1 teaspoon curry powder
  • 1/4 teaspoon ground dried coriander
  • 1 cup frozen peas
  • salt and pepper, to taste

Directions: 

Cover the cauliflower and potatoes with water in a medium-sized pot and bring to a boil over high heat. Reduce heat to medium-low or low, and cover the pot. Cook the veggies in gently boiling water until they’re tender, approximately 15 minutes. 

Drain the cauliflower and potatoes, and mix all ingredients in an oven safe casserole dish. Place the dish under the broiler until the top starts to turn brown and crispy, approximately 5 to10 minutes.
