Celebrate Spring Produce With These Asparagus Recipes

Cooking with in-season produce is a delicious way to pack your meals with nutrition and color, and spring brings with it plenty of produce that’s ready to be enjoyed. Asparagus is one veggie that’s ripe for picking, and you can do far more with it than roasting.

Make a trip to the farmer’s market or grocery store, and then get ready to whip up one of these six asparagus recipes.

1. One-Pan Lemon Roasted Salmon and Garlic Parmesan Asparagus

When it comes to dinner prep, there’s nothing better than a healthy recipe that can be cooked in a single pan. This combination of asparagus and salmon is flavored with lemon, pepper, garlic, and parmesan, can be prepped in 10-15 minutes, and has a total roasting time of 20 minutes. Getting a balanced meal on the dinner table doesn’t get much easier.

2. Goddess Bowls

This bowl contains chicken, brown rice, avocado, cherry tomatoes, and (you guessed it), asparagus. The creamy dressing is made with Greek yogurt, mayonnaise, and spices, and it really brings the meal together. You can enjoy these bowls for lunch and dinner, and making them ahead of time is an excellent meal prep hack.

3. Balsamic Parmesan Roasted Asparagus and Tomatoes

You can’t beat a hearty recipe with only six ingredients! The balsamic vinegar really shines in this dish, and it’s a surprisingly perfect addition to roasted asparagus and tomatoes. It makes a perfect side dish, and you could even add chicken or beef to make a complete meal.

4. Vegan Creamed Mushroom and Asparagus Pasta

The creamy sauce is the stand out star in this meal, and it’s even vegan. It’s an easy-to-make mix of vegan cream cheese, garlic, almond milk, nutritional yeast, vegan parmesan cheese, lemon juice, and red pepper flakes. Your pasta will be ready to eat in approximately 30 minutes.

5. Asparagus Sweet Potato Chicken Skillet

It’s not a sheet pan dinner, but preparing this skillet dinner is just as easy as making our beloved sheet pan recipes. It’s an ideal meal for busy weeknights, especially since it can be prepared in a half hour. If you’re looking for a gluten-free, paleo dinner option, give this dish a try.

6. Baked Eggs and Asparagus with Parmesan

Asparagus isn’t just for lunch and dinner. It’s also a nutrition-packed addition to breakfast (though you could easily eat these baked eggs and asparagus for any meal.)

Runny eggs combine with crisp green asparagus, and you can have this dish on the table in less than 30 minutes. Just be sure to follow the directions on the recipe, like letting your eggs come to room temperature. This ensures the consistency of the eggs is just right.
