Healthy, Easy, and Delicious Car Camping Meals

Give your car camping menus an upgrade from the traditional hot dogs and hamburgers (keep the s’mores though!) with a bit of planning and creativity. Car camping meals can be both easy to prepare and delicious. Here are some ideas to make your next camping trip the tastiest yet.

 

Pinnacles Scramble

This delicious scramble is camp friendly and will add some spice to your mornings. It features chipotle chilies in adobo sauce, poblano chilies, salsa, eggs, potatoes, and cheese for lots of flavor. The recipe includes at home instructions, too.

 

Campfire Baked Potatoes

Meals cooked in aluminum foil are perfect for camping, and baked potatoes are one of the easiest and most versatile options around. A very basic recipe is below, but you can load your baked potatoes up however you like -- bacon bits, chives, shredded cheese. Get creative!


Ingredients:

  • Potatoes
  • 1 Tablespoon of butter per potato
  • Toppings of your choice

 

Directions:

Poke each potato with a fork several times so moisture can escape as the potatoes cook. Smear each spud with butter, then double wrap them in aluminum foil. Cook on hot coals from the bonfire for 30 to 60 minutes, until soft. Let them cool off before opening, add your toppings, and enjoy.


Easy Pizza Quesadillas

Seriously, these quesadillas could hardly be easier to make. They’re a great snack or a meal on their own and you can customize them however you like.

 

Ingredients: 

  • Tortillas
  • Canned tomato sauce
  • Shredded cheddar cheese
  • Chopped onions
  • Sliced pepperoni
  • Cooking oil of your choice, or butter

Directions:

Spread the ingredients onto each tortilla. Fold them in half and lightly brown each side by cooking the tortillas in oil or a bit of butter. That’s it!


Car Camping Tiramisu

REI shared this recipe on their blog, and it’s the perfect dessert to enjoy on your next camping trip. Making it is super easy, too.


Ingredients:

  • Vanilla pudding mix (3.4 oz.)
  • 3 cups cold water
  • 1 cup powdered milk
  • 1 packet (2 tsp) instant coffee
  • 1 mini-bottle (4 oz.) coffee liqueur
  • Angel food cake
  • Dark chocolate shavings
  • Chocolate syrup

Directions:

First, prepare the pudding by whisking together the pudding mix, water, and powdered milk in a large bowl. Set aside for 5-10 minutes. Meanwhile, stir the instant coffee and coffee liqueur together. 

Spread a layer of the pudding in a baking dish or bowl, followed by a layer of angel food cake slices. Pour the coffee mixture over the cake. Repeat layers: pudding, cake, and coffee mixture. Finish with pudding and dark chocolate shavings. Serve with chocolate syrup.
