Summer Salad Recipes Satisfying Enough For Dinner

 

There’s no reason to ever eat a bland salad, and a good salad can definitely hold its own as a dinner entree. When you need a refreshing and filling salad for a summertime dinner, give one of these recipes a try.

 

1. Cilantro Lime Chicken Salad with Mango Avocado Salsa

We wouldn’t be surprised if the name of this salad already has you salivating. It’s full of flavor, and the mango and avocado go together surprisingly well.

 

You’ll make a marinade that doubles as a dressing, the salad itself, and a delicious mango salsa.

 

2. Shrimp, Avocado, and Roasted Corn Salad

This salad is seriously full of flavor, from the roasted corn to the creamy buttermilk dressing.

 

Salad Ingredients:

  • 2 ears of sweet corn, cut off the cob
  • 3 strips of bacon, diced
  • ½ pound large raw shrimp, peeled
  • 4 cups chopped Romaine lettuce
  • 1 avocado, peeled, pitted and diced
  • 1/3 cup grated Fontina cheese (optional)
  • buttermilk pesto dressing (see below)

 

Buttermilk Pesto Dressing Ingredients:

  • 1/2 cup buttermilk
  • 1/2 cup Greek yogurt
  • 1/4 cup pesto
  • 1 small shallot, minced
  • 1 Tablespoon lemon juice
  • Pinch of salt and pepper, to taste

 

Directions:

Dry roast the corn kernels for 6-8 minutes in a heated skillet on high heat, stirring occasionally. The edges will start to brown and caramelize. Transfer them to a plate and set aside.

 

Reduce the heat to medium-high and fry the bacon in the same skillet for 6 minutes or until desired crispiness is reached. Remove the bacon and leave the grease in the skillet.

Saute the shrimp until cooked and pink, approximately 2 minutes per side. Remove the shrimp, set them aside. Toss the Romaine, corn, bacon, shrimp and avocado together.

To make the dressing, simply whisk the ingredients thoroughly and season with salt and pepper. Drizzle the dressing over your salad, add some cheese if desired, and chow down. Makes two servings.

 

3. Easy Cucumber and Tomato Salad

If you’ve ever grown your own tomatoes or cucumbers, you know it can be a challenge to use all that produce. This refreshing salad uses ample amounts of both. You can even add chicken, fish, or other favorite protein.

 

Ingredients:

  • 2 cucumbers, diced
  • 2 medium tomatoes, diced
  • 1 medium onion, diced
  • ½ cup Italian dressing
  • Salt and pepper to taste (if desired, try it without first)

 

Directions:

Combine all the ingredients — that’s it! This is one seriously easy-to-make salad.
